  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F; grease a 9” square baking dish.
  2. In a sauté pan, boil apple cider until reduced by half (about 5 minutes).
  3. Whisk together eggs, sugars, oil, sour cream, spices, baking powder, baking soda, and salt in a medium bowl.
  4. Combine the boiled cider mixture with the wet ingredients.
  5. Stir in flour until just mixed; pour batter into the prepared dish.
  6. Bake for 22-25 minutes until golden brown.
  7. Cool slightly before topping with melted butter and cinnamon-sugar mixture.
