  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F and line a muffin tin with paper liners.
  2. In a bowl, combine ¾ cup flour, ¼ cup light brown sugar, 2 tablespoons granulated sugar, and optional ground cinnamon. Stir in melted butter until clumps form; set aside.
  3. In another bowl, whisk together 2 cups flour, baking powder, salt, and optional spices.
  4. In a large bowl, cream ½ cup light brown sugar, ¼ cup granulated sugar, and ½ cup softened butter until fluffy. Add eggs, sour cream, and vanilla; mix well.
  5. Gradually incorporate the dry ingredients alternately with milk until just combined; fold in diced apples.
  6. Fill muffin cups three-quarters full and sprinkle crumble on top.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Cool slightly before transferring to wire racks.
