Ingredients

Scale
  • 900 g apples
  • 600 ml water
  • 700 g sugar (approximately)
  • 1 sprig dried thyme per jar

Instructions

  1. Prepare the Apples: Wash and cut apples into 1.5"-2" chunks without peeling or coring.
  2. Cook the Apples: Place apple chunks in a large pan, add water, and cook on low heat until soft.
  3. Extract the Juice: Transfer pureed apples to a jelly bag to collect juice.
  4. Mash Remaining Apples: Use a potato masher to ensure all juice is extracted.
  5. Measure Juice and Add Sugar: Measure juice collected; add three-quarters of its weight in sugar and a sprig of thyme.
  6. Dissolve Sugar and Heat: Slowly dissolve sugar over low heat; remove thyme once dissolved and bring to a boil until setting point is reached.
  7. Jar Your Jelly: Cool slightly before transferring to sterilized jars, adding thyme to each jar before sealing.
