  • 2 cups (250 g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat the oven to 325°F and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together room temperature butter, granulated sugar, and light brown sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In a separate bowl, whisk together flour, baking powder, salt, and spices.
  5. Gradually blend dry ingredients into the wet mixture, alternating with apple cider.
  6. Gently fold in grated apple.
