  • 1 garlic clove
  • 2 cups long grain white rice
  • 1/8 cup olive oil
  • 1 tbsp chicken bouillon
  • 1 1/2 cups water

Instructions

  1. Make the Tomato Sauce: Cook tomatoes, onion, and garlic in water until soft (about 4-5 minutes). Blend until smooth and set aside.
  2. Prepare the Rice: Heat olive oil in a large pot over medium heat. Toast the rice for about 5 minutes. Add diced onion and toast until golden. Stir in minced garlic, chicken bouillon, cumin, prepared tomato sauce, and water; mix well.
  3. Cook: Cover the pot and cook on medium heat for approximately 12 minutes. Let it rest with the lid on for an additional 5 minutes before serving.
