  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line your muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese with granulated sugar, egg yolk, and vanilla until smooth.
  5. Fill muffin cups 3/4 full with batter and top each with cream cheese mixture; swirl gently with a toothpick.
  6. Bake for 18 to 20 minutes until a toothpick comes out clean. Cool before serving.
