  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 2 boneless skinless chicken breasts (butterflied and pounded)
  • Salt and pepper to taste
  • 1/3 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms (sliced)
  • 3 garlic cloves (minced)
  • Fresh thyme and oregano for seasoning
  • 1/3 cup heavy cream

Instructions

  1. In a medium saucepan, combine marsala vinegar and chicken broth. Bring to a boil over medium-high heat, then reduce to medium and simmer until reduced to one cup (about 15 minutes).
  2. Season chicken with salt and pepper; dredge in flour.
  3. In a skillet over medium-high heat, melt butter with olive oil. Sear the chicken for about 10-12 minutes until cooked through (165°F), flipping halfway.
  4. Transfer the chicken to a plate; cover with foil to keep warm.
  5. In the same skillet, sauté mushrooms until golden brown (about 8 minutes). Add garlic during the final minute.
  6. Pour in the reduced marsala mixture and add herbs; simmer while scraping up browned bits from the pan.
  7. Stir in cornstarch mixture until thickened, then add heavy cream. Return chicken to the sauce and heat briefly.
  8. Serve immediately, garnished with parsley.
