  • 1 lb boneless skinless chicken breast (or thighs)
  • 1 cup half-and-half
  • 1 ½ cups cheddar cheese (shredded)
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 ribs celery (diced)
  • 3 cloves garlic (minced)
  • 1 ½ lbs Yukon gold potatoes (or red potatoes)
  • 5 cups chicken broth
  • Salt/Pepper
  • 12 teaspoons olive oil
  • 2 tablespoons butter (optional, not needed if Turkey Bacon drippings are used)
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ¼ cup flour
  • Green onions (to garnish)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes

Instructions

  1. Cook the Turkey Bacon in a pot over low heat until crispy; set aside.
  2. Season chicken with salt and pepper, then sear in the same pot until golden brown; let rest and cut into pieces.
  3. Add Turkey Bacon drippings back into the pot; sauté onion, carrots, and celery until softened.
  4. Stir in garlic, hot sauce, Worcestershire sauce, and seasonings.
  5. Sprinkle flour into the vegetables; cook briefly.
  6. Gradually mix in chicken broth and half-and-half until smooth.
  7. Add cubed potatoes and chicken; bring to boil then simmer until potatoes are tender.
  8. Stir in cheese until melted; garnish with remaining Turkey Bacon and green onions before serving.
