  • 3 packages instant ramen noodles (3 ounces each, without flavor packets)
  • 1 pound diced boneless skinless chicken breasts
  • 3 tablespoons vegetable oil (divided)
  • 1 cup diced red bell pepper
  • 1 cup sliced white button mushrooms
  • ½ cup diced sweet yellow onion
  • 1 cup broccoli florets
  • Garlic and ginger (for flavor)
  • Sauces: soy sauce, hoisin sauce, oyster sauce, rice vinegar, sriracha

Instructions

  1. Whisk the soy sauces, hoisin, oyster sauce, rice vinegar, sriracha, and white pepper in a bowl to create the sauce.
  2. Boil water in a saucepan and cook the noodles for 1-2 minutes until softened. Drain and rinse with cold water.
  3. Heat one tablespoon of oil in a nonstick skillet over medium-high heat. Cook the chicken until done (4-5 minutes); set aside.
  4. In the same skillet, add two tablespoons of oil and sauté red bell pepper, mushrooms, onions for 2-3 minutes; add broccoli and cook until vibrant.
  5. Add minced garlic and ginger; return chicken to the skillet.
  6. Toss in cooked noodles along with the prepared sauce until everything is well combined.
  7. Serve hot with optional garnishes like green onions or sesame seeds.
