  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. In a bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, minced garlic, minced ginger, and cornstarch mixture.
  3. In a large skillet or wok over medium-high heat, add vegetable oil and cook the sliced chicken for 5-7 minutes until golden brown.
  4. Add sliced bell peppers, broccoli florets, and julienned carrots; stir-fry for about 3-4 minutes until vegetables are tender but crisp.
  5. Combine cooked noodles with the chicken and vegetables; pour teriyaki sauce over everything. Toss to combine and heat through for another 2-3 minutes.
  6. Serve immediately garnished with sliced green onions and sesame seeds if desired.
