  • 1 lb boneless chicken thighs
  • 1 medium zucchini
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons sugar (or honey)
  • 3 cloves garlic
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1 tablespoon cooking oil
  • Ground black pepper (optional)

Instructions

  1. In a mixing bowl, combine the chicken, cornstarch, soy sauce, sesame oil, sugar (or honey), vinegar (if using), and smashed garlic. Let marinate for 30 minutes.
  2. Heat cooking oil in a wok or large frying pan over medium-high heat.
  3. Add the marinated chicken and garlic; stir fry for about 2 minutes until chicken is opaque. Remove from pan.
  4. Sauté sliced zucchini in the same pan for about 5 minutes until softened.
  5. Return the chicken to the pan, add oyster sauce, and stir-fry everything together for another 2-3 minutes.
  6. Serve hot over rice or noodles.
