  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 3 cloves garlic, smashed
  • 1 medium zucchini, sliced
  • 1/4 cup light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cooking oil
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar (or honey)
  • Optional: ground black pepper

Instructions

  1. In a mixing bowl, combine chicken with cornstarch, soy sauce, sesame oil, sugar (or honey), and optional rice vinegar. Let marinate for 30 minutes.
  2. Heat cooking oil in a wok or large skillet over medium-high heat.
  3. Add garlic to the pan followed by the marinated chicken and stir-fry for about 2 minutes until no longer translucent.
  4. Remove the chicken and set aside. In the same pan, stir-fry sliced zucchini for about 5 minutes until softened.
  5. Return the chicken to the pan along with oyster sauce and optional pepper; stir-fry for another 2-3 minutes until cooked through.
  6. Serve immediately over rice or noodles.
