  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup light brown sugar
  • 1 large egg
  • 1 cup mashed bananas (about 2 medium bananas)
  • 2 teaspoons vanilla extract
  • ¾ cup mini chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (177°C) and line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl until fully melted and let it cool slightly.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Combine the melted butter with brown sugar in a large bowl and mix well. Add in the egg, mashed bananas, and vanilla extract; whisk until smooth.
  5. Gradually stir in the dry ingredients until just combined and fold in half of the chocolate chips.
  6. Pour the batter into the prepared pan and sprinkle remaining chocolate chips on top.
  7. Bake for 30–35 minutes or until set in the center and firm around the edges.
  8. Allow to cool before lifting out of the pan to slice into bars.
