  • 1 teaspoon ground cumin

  • Cooked rice (white or brown)
  • Black beans
  • Corn (fresh or frozen)
  • Cherry tomatoes
  • Avocado
  • Red onion

Instructions

  1. In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper.
  2. Marinate flank steak in the mixture for at least 30 minutes (up to 4 hours) in the refrigerator.
  3. Cook rice as per package instructions.
  4. Warm black beans in a saucepan and prepare corn accordingly.
  5. Preheat grill or grill pan over medium-high heat and cook steak for about 4-5 minutes on each side for medium-rare.
