  • 1/3 cup brown sugar (for streusel)
  • 2 tsp cinnamon (for streusel and dough)
  • 5 Tbsp unsalted butter (softened for streusel)
  • 1 1/4 cup all-purpose flour (for cookie dough)
  • 3/4 cup cake flour (for cookie dough)
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 8 Tbsp cold unsalted butter (cut into cubes for cookie dough)
  • 1/2 cup brown sugar (packed for cookie dough)
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp unsalted butter (melted)
  • 3 Tbsp heavy cream or milk
  • 1 cup powdered sugar (for icing)
  • 1 tsp vanilla (for icing)
  • pinch salt (for icing)

Instructions

  1. In a bowl, mix together the streusel ingredients: flour, brown sugar, cinnamon, and salt. Work in softened butter until crumbly. Refrigerate.
  2. Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
  3. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, cinnamon, baking soda, baking powder, and salt.
  4. In a stand mixer, cream cold cubed butter with sugars until smooth. Add eggs and vanilla; mix until combined.
  5. Gradually incorporate dry ingredients until fully mixed.
  6. Roll the dough into balls on prepared sheets and create indents for filling.
  7. Spoon chilled streusel into each indent and bake for 8-11 minutes until edges are golden.
  8. Cool slightly before drizzling with icing made from powdered sugar, vanilla, and salt.
