  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint cherry tomatoes (halved)
  • 1 cup English cucumber (diced)
  • ½ cup red onions (finely diced)
  • 1/3 cup fresh cilantro (roughly chopped)
  • 3/4 cup fresh Cotija cheese
  • 3 tablespoons avocado oil
  • ¼ cup lime juice
  • 2 tablespoons red apple vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder

Instructions

  1. Prepare the dressing by shaking all ingredients in a container with a lid; refrigerate.
  2. Boil water in a large pot with salt; cook corn for four minutes. Drain and cool.
  3. Cut kernels from cooled corn and combine them with diced vegetables in a large bowl.
  4. Shake the dressing again and pour over the salad; toss to combine.
  5. Serve immediately or chill for up to one day.
