1 lb ground beef
1 small onion, diced
2 garlic cloves, minced
4 cups beef broth
1 (14.5-ounce) can diced tomatoes (with juice)
1 (15-ounce) can whole kernel corn, drained
1 (15-ounce) can black beans, drained and rinsed
1 cup diced potatoes
1 cup heavy cream or half-and-half
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon ground cumin
Salt and black pepper, to taste
Instructions
In a large pot or Dutch oven over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Add diced onion and sauté for 3–4 minutes until softened; stir in minced garlic for an additional minute.
Pour in beef broth, diced tomatoes (with juice), corn, black beans, and potatoes; mix well.
Stir in spices—smoked paprika, chili powder, ground cumin—and season with salt and pepper. Bring to a gentle boil then lower heat to simmer uncovered for about 20 minutes.
Incorporate heavy cream or half-and-half into the soup and heat for an extra 5 minutes without boiling.
Serve hot with toppings like shredded cheddar cheese and crushed tortilla chips.
