  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes (with juice)
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced potatoes
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion and sauté for 3–4 minutes until softened; stir in minced garlic for an additional minute.
  3. Pour in beef broth, diced tomatoes (with juice), corn, black beans, and potatoes; mix well.
  4. Stir in spices—smoked paprika, chili powder, ground cumin—and season with salt and pepper. Bring to a gentle boil then lower heat to simmer uncovered for about 20 minutes.
  5. Incorporate heavy cream or half-and-half into the soup and heat for an extra 5 minutes without boiling.
