  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned (5–7 minutes). Remove and set aside.
  3. In the same pot, sauté chopped onion for 3–4 minutes; add minced garlic and sauté for another 1–2 minutes.
  4. Return chicken to the pot, pour in chicken broth, and stir well.
  5. Mix in heavy cream and whole milk until combined.
  6. Season with dried basil, oregano, salt, black pepper, and optional red pepper flakes; stir well.
  7. Simmer for 10–15 minutes to meld flavors.
  8. Stir in grated Parmesan and shredded mozzarella until melted.
  9. Add chopped spinach, diced carrot, and diced celery; cook for an additional 5–7 minutes until tender.
  10. Taste and adjust seasoning if needed before serving warm.
