  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 8 slices sourdough bread
  • 4 oz grated white cheddar cheese
  • 4 oz shredded mozzarella cheese
  • 4 tbsp butter
  • Flaky sea salt

Instructions

  1. Prepare the blueberry compote by mixing blueberries, sugar, lemon juice, and lemon thyme in a bowl. Let sit for 10 minutes.
  2. Assemble the sandwiches: Layer one slice of sourdough with half of the cheddar, some blueberry compote, half of the mozzarella, and top with another slice of bread. Repeat.
  3. Heat a non-stick skillet over medium heat and melt 2 tbsp butter. Cook each sandwich for 3-4 minutes on each side until golden brown and cheese is melted.
