  • 2 pounds ground beef (or ground chicken)
  • 2 yellow onions, chopped
  • 2 poblano peppers, chopped
  • 1 can (28 ounces) crushed fire-roasted tomatoes
  • 1/3 cup hot sauce
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 23 cups chicken or beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 1/2 teaspoon cayenne pepper
  • 3 tablespoons salted butter
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Chop all vegetables and measure out spices.
  2. In a skillet over medium heat, brown the ground beef until fully cooked, then drain excess fat.
  3. Transfer the meat to the slow cooker and add onions, poblanos, spices, crushed tomatoes, hot sauce, butter, bay leaves, salt, and broth; stir well.
  4. Cook on low for about 120 minutes.
  5. Stir in cream cheese and cheddar cheese until melted and creamy.
  6. Serve topped with mixed chili beans, cilantro, green onions, avocado slices, and Greek yogurt.
