  • 1/4 cup diced yellow onion
  • 1/2 medium diced bell pepper
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 cup Mexican blended cheese
  • 1 package pre-made pie crust (2 rolls)
  • 1 egg (beaten for egg wash)

Instructions

  1. Preheat oven to 350°F.
  2. Prepare a cookie sheet with parchment paper.
  3. In a large skillet over medium heat, cook ground beef, onions, and bell pepper until beef is browned; drain excess fat.
  4. Add spices (cumin, garlic, salt, pepper, chili powder) and stir for 2 minutes.
  5. Roll out pie crusts and cut into circles.
  6. Place filling (2–3 tablespoons) and cheese (1 tablespoon) on each circle.
  7. Fold dough over filling; seal edges with a fork.
  8. Brush tops with beaten egg.
  9. Bake for 12–15 minutes or until golden brown.
