  • 4 cups edible flower blossoms
  • 4 cups water
  • 2 tbsp lemon juice
  • 1 to 4 cup sugar (adjust to taste)
  • 1 box powdered pectin (1.75 oz)

Instructions

  1. Prepare the blossoms by removing them from their stems, discarding any green parts.
  2. Infuse the flowers by pouring boiling water over them and letting steep for 10 minutes.
  3. Strain the floral tea into a saucepan, adding lemon juice.
  4. Bring the mixture to a boil, stir in pectin until dissolved, and boil for one minute.
  5. Gradually add sugar, stirring until dissolved, then boil again for one minute.
  6. Pour into jars, leaving about 1/4 inch headspace, and process in a water bath canner for 10 minutes if canning.
