  • 1 demi baguette
  • ½ cup basil pesto
  • Gel food coloring (black)
  • 12 ounces cherry tomatoes
  • Olive oil
  • Salt
  • Black pepper
  • Red pepper flakes
  • Fresh basil for garnish
  • Balsamic vinegar glaze

Instructions

  1. Preheat your oven to 350°F.
  2. Fill silicone skull molds with mozzarella pearls and bake for about 6–7 minutes until melted but not browned.
  3. Increase the oven temperature to 475°F. Halve the cherry tomatoes, place them on parchment-lined baking sheets, drizzle with olive oil, season, and roast for 10–15 minutes until soft.
  4. Slice the baguette into ½-inch pieces and toast in the oven for about 8–10 minutes until lightly golden.
  5. In a mixing bowl, combine basil pesto with black gel food coloring to achieve desired color.
  6. Spread black pesto on toasted baguette slices and return them to the oven for another 8–10 minutes.
  7. Top each bruschetta slice with roasted tomatoes and mozzarella skulls before serving.
