  • 2 apples
  • 1/3 cup honey
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast un-pierced sweet potatoes on a baking sheet for 40-45 minutes until soft. Allow to cool before peeling.
  3. Peel, core, and slice the apples; drizzle with lemon juice if desired.
  4. Slice cooled sweet potatoes into 1/2-inch thick pieces.
  5. Layer the apple slices and sweet potato slices alternately in an 8×8 or 9×9 baking dish.
  6. In a small saucepan, melt together honey, butter, cinnamon, and vanilla over low heat until fully combined.
  7. Pour the honey mixture over the layered casserole and sprinkle with chopped pecans if using.
  8. Bake at 350°F (175°C) for 15-20 minutes until heated through.
