  • 2 lb beef chuck stew meat
  • 1 medium onion
  • 2 medium carrots
  • 2 cloves garlic
  • 1 lb celery root
  • 6 cups beef bone broth
  • 1 can diced tomatoes

Instructions

  1. Season the beef chuck with sea salt and black pepper.
  2. In a Dutch oven, heat 1 tablespoon of olive oil over medium heat. Sear the beef in batches until browned on all sides; set aside.
  3. Add another tablespoon of olive oil to the pot and sauté diced onions and sliced carrots until softened.
  4. Stir in minced garlic and Italian seasoning for a minute until fragrant.
  5. Return the seared beef to the pot along with beef bone broth, diced tomatoes, and bay leaves; bring to a boil.
  6. Reduce heat to medium-low and cover; simmer for 45-60 minutes until beef is tender.
  7. Add cubed celery root; increase heat to a boil again, then cover and simmer for an additional 15 minutes.
  8. Remove bay leaves before serving.
