  • 1/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • Juice and zest from 1 lemon
  • 1 + 1/2 cups fresh blueberries (divided)
  • ½ cup icing sugar (for glaze)
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, mix milk, oil, egg, vanilla extract, lemon juice, and zest until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined; do not overmix. Fold in 1 cup of blueberries.
  5. Transfer the batter to the prepared loaf pan and sprinkle the remaining blueberries on top.
  6. Bake for about 55 minutes until golden brown and a toothpick inserted comes out clean. Cool for about 10–15 minutes before removing from the pan.
  7. For the glaze, mix icing sugar with lemon juice until smooth and drizzle over the cooled bread.
