  • 2 ripe pears (Anjou, Bosc or Bartlett), sliced
  • 3/4 English cucumber, chopped
  • 1 small red bell pepper, chopped
  • 1/4 red onion, thinly sliced
  • 1/2 cup roasted pepitas (or sunflower seeds)
  • 1/2 cup pomegranate seeds (or dried cranberries)
  • 1/2 cup crumbled feta cheese (or goat cheese)
  • 1 5.3 oz. container Pomegranate Greek Yogurt
  • 3 tablespoons Asian Sweet Chili Sauce
  • 3 tablespoons pomegranate juice
  • 2 tablespoons mayonnaise
  • 12 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon poppy seeds (optional)
  • 1/4 teaspoon salt

Instructions

  1. To prepare the dressing, whisk together all dressing ingredients in a medium bowl. Chill in the refrigerator.
  2. In a large bowl, combine all salad ingredients. If serving immediately, drizzle desired dressing amount over the salad and toss gently. For leftovers, dress individual servings instead.
