  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C/400°F.
  2. Peel and chop the butternut squash into cubes and place in a baking dish.
  3. Add garlic (in skins), thyme, olive oil, salt, and pepper; mix well.
  4. Place feta cheese in the center of the mixture, sprinkle with thyme, and drizzle with extra olive oil.
  5. Roast for about 25 minutes until the pumpkin is tender.
  6. Cook pasta according to package instructions; reserve some pasta water before draining.
  7. Mash roasted garlic and break up feta in the baking dish.
  8. Stir in baby spinach and cooked pasta; add reserved pasta water for creaminess.
  9. Mix thoroughly and serve topped with optional chili flakes and crumbled walnuts.
