  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Add melted butter and stir to form the crumble mixture.
  3. Press two-thirds of the crumble mixture into the prepared dish to create an even base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Top with the remaining crumble mixture and sprinkle with optional chopped walnuts if desired.
  7. Bake for 30–35 minutes until golden brown on top and filling is set.
  8. Allow cooling completely before slicing into squares.
