  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounce package refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt
  • fresh cracked pepper
  • shaved Parmesan
  • fresh chopped parsley

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper until softened (about 3–4 minutes).
  3. Stir in minced garlic and Italian seasoning; sauté for 30 seconds.
  4. Add Italian sausage, crumbling as it cooks until browned.
  5. Mix in chicken broth, crushed tomatoes, and ravioli; season with salt and pepper.
  6. Bring to a simmer, then reduce heat and cook for 3–5 minutes until ravioli are al dente.
  7. Stir in spinach and heavy cream until spinach wilts; adjust seasoning as needed.
  8. Garnish with shaved Parmesan and parsley before serving.
