  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 5 cups white sugar
  • 1 1/2 packages Sure-Jell powder pectin

Instructions

  1. Sterilize six 8-ounce canning jars and lids.
  2. In a large saucepan, combine red, green, and jalapeño peppers with apple cider vinegar and pectin. Bring to a rolling boil while stirring constantly.
  3. Stir in the sugar quickly, return to a boil, and cook for 2–3 minutes. Skim off any foam.
  4. Ladle the mixture into prepared jars, leaving about 1/4 inch from the top. Seal with lids.
  5. Process in a hot water canner for five minutes, then cool completely on a towel or rack.
