  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 1 (10-oz.) bag sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak the pineapple rings in dark and coconut rums for at least one hour.
  2. Set up three shallow dishes: one with flour, another with coconut flakes, and the last with whisked eggs and coconut milk.
  3. Coat each pineapple ring in flour, dip in egg mixture, and cover in coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) and fry the coated rings until golden brown, about 1 minute per side.
  5. For the dipping sauce, blend softened cream cheese with powdered sugar and reserved rum to desired consistency.
