  • 250 g All-purpose flour
  • 100 g Butter (or lard for non-vegetarian option)
  • 100 ml Boiling water
  • 400 g Ground lamb (or beef)
  • 1 tsp Onion (finely chopped)
  • 1 tsp White pepper
  • 0.5 tsp Black pepper
  • 0.5 tsp Ground mace
  • 0.25 tsp Ground nutmeg
  • 1 Egg (beaten, for brushing)

Instructions

  1. Make the Pastry: In a saucepan, combine butter and boiling water until melted. Pour this over flour and half of the salt in a mixing bowl. Stir and knead until smooth.
  2. Prepare the Filling: Mix ground lamb (or beef), onion, spices, and remaining salt in a bowl until well combined.
  3. Shape the Pies: Roll out pastry on a floured surface to about 1/8-inch thick. Cut circles for bases and tops, lining muffin tins with larger circles.
  4. Fill and Seal: Spoon filling into pastry cases. Moisten edges with water, place tops on, and crimp edges to seal.
  5. Bake: Brush with beaten egg and bake at 180°C (350°F) for 30-35 minutes until golden brown.
  6. Cool and Serve: Let cool briefly before removing from molds; serve warm or at room temperature.
