  • 1 Tbsp cornstarch
  • 2 tsp black pepper
  • 1 1/2 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup minced fresh cilantro

Instructions

  1. Preheat your oven to 400°F and line baking sheets with parchment paper.
  2. Wash and dry the potatoes, then slice each into wedges.
  3. In a large mixing bowl, combine potato wedges with vegetable oil and minced garlic. Toss well.
  4. Add Parmesan cheese, cornstarch, pepper, salt, onion powder, paprika, chili powder, and cilantro. Mix thoroughly using your hands for even coating.
  5. Spread the wedges on baking sheets in a single layer skin side down. Bake for 15 minutes at 400°F, then reduce the temperature to 375°F and bake for an additional 40 minutes until golden brown and crispy.
