  • 2 medium zucchini (cubed)
  • 1 onion (chopped)
  • 1 bell pepper (chopped)
  • 4 fully cooked sausages (sliced)
  • Olive or avocado oil
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt
  • 1 tsp garlic (minced)

Instructions

  1. Heat 1 tablespoon of oil in a skillet over medium-high heat.
  2. Add the sliced sausage and sauté until browned. Remove and set aside.
  3. Lower the heat to medium, add remaining oil, then add zucchini, onion, and bell pepper.
  4. Season with garlic powder, oregano, basil, onion powder, salt, and pepper; stir well.
  5. Cook until vegetables are tender (about 5 minutes).
  6. Return the sausage to the skillet with minced garlic; mix well and cover briefly to meld flavors before serving.
