  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • 1 small yellow onion (diced)
  • 1 pound small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • Salt and black pepper (to taste)
  • Fresh herbs (such as parsley, thyme, or oregano)
  • ¼ cup vegetable broth
  • Grated parmesan (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, seasoning with salt and pepper; sauté for 3-4 minutes until fork-tender. Remove from skillet.
  3. In the same skillet, melt remaining butter; add diced onions and cook for about 2 minutes until softened.
  4. Introduce cleaned mushrooms; cook for 5-7 minutes until browned.
  5. Stir in minced garlic and fresh herbs; cook for an additional 20 seconds until fragrant.
  6. Return zucchini to the skillet, combine well, and heat through for about 1 minute.
  7. Pour in vegetable broth; simmer for another 2 minutes to meld flavors.
  8. Adjust seasoning as necessary, then garnish with parsley and grated parmesan before serving.
