  • 1 1/2 cups dark chocolate chips
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs, at room temperature
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 20 oz semi-sweet chocolate chips (for coating)
  • 1 tbsp coconut oil
  • 1 cup powdered sugar (for icing)
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9 x 9 inch cake pan with parchment paper.
  2. Melt butter and dark chocolate chips in a microwave-safe bowl, stirring until smooth.
  3. Beat eggs in a stand mixer until frothy; mix in melted chocolate and vanilla.
  4. Combine dry ingredients (flour, cocoa powder, baking powder) into the wet mixture until just combined.
  5. Spread brownie batter evenly in the prepared pan and bake for 25-30 minutes; cool completely before cutting into squares.
  6. Coat brownies with melted semi-sweet chocolate mixed with coconut oil.
  7. Decorate with icing made from powdered sugar and cream.
