  • 2 3/4 cups (344 g) all purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese with sugar and vanilla until smooth; set aside.
  2. Create the strawberry mixture by combining finely diced strawberries with sugar; let it sit to meld flavors.
  3. Make the cookie dough by creaming softened butter with sugar, then adding an egg and vanilla.
  4. Combine dry ingredients separately before gradually adding to the wet mixture until just combined.
  5. Fold in the strawberry mixture gently.
  6. Preheat the oven to 350°F (175°C). Scoop dough, fill with cheesecake filling, roll in sugar, then bake for about 11 minutes until lightly golden.
