  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • Pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking sheet with olive oil.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a mixing bowl, combine shredded zucchini, grated garlic, egg, breadcrumbs, Parmesan cheese, herbs, salt, and pepper.
  4. Shape the mixture into small balls (about 1 tablespoon each) and place them on the prepared baking sheet.
