Instructions

  1. Squeeze excess moisture from the grated zucchini using a cheesecloth or kitchen towel.
  2. In a mixing bowl, combine the dry zucchini with egg, Parmesan, cornstarch, salt, and pepper. Mix until a dough-like texture forms.
  3. Melt garlic butter in a skillet over medium heat.
  4. Shape half of the mixture into a patty and cook for 3–4 minutes on each side until golden brown. Repeat for the second patty.
  5. Once cooked, place shredded cheddar on one patty and top with the other to create a sandwich, cooking for an additional 3 minutes until cheese melts.
