  • 4 ounces cream cheese, softened
  • 1/2 cup canned pumpkin puree
  • 1 can (14 ounces) sweetened condensed milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 cup graham cracker crumbs
  • 1/3 cup white chocolate chips
  • Granulated sugar for rolling

Instructions

  1. In a skillet over medium heat, melt the butter and combine with cream cheese, pumpkin puree, sweetened condensed milk, and pumpkin pie spice. Stir until thickened.
  2. Mix in graham cracker crumbs and white chocolate chips until melted and smooth. Optionally add food coloring.
  3. Pour the mixture onto a greased baking sheet and spread evenly. Refrigerate until firm (about 2 hours).
  4. Once firm, rub butter on your hands to prevent sticking and roll the mixture into small balls.
  5. Roll each truffle in granulated sugar to coat evenly.
  6. Use a toothpick to create ridges on each truffle and top with chocolate chips.
