  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess liquid using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine the squeezed zucchini with Panko breadcrumbs, eggs, Parmesan, Mozzarella, garlic, salt, and pepper. Mix until well combined.
  3. Preheat a non-stick pan over medium heat and add oil.
  4. Use an ice cream scoop to portion the mixture into the pan and shape them into fritters.
  5. Cook each fritter for 4-6 minutes on each side until golden brown.
